Cranberry Crunch Balls

Ingredients:
1/4 cup cashews
1/4 cup pistachios
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup dried cranberries
1/4 dried cherries
2 TBL fresh grated ginger
1-1/2 TBL Cinnamon
1/2 tsp sea salt
1/4 cup honey or agave, as needed
3 Tbl sesame seeds for coating
Directions: Put nuts & seeds in food processor & chop into small bits (not too fine). Transfer to bowl. Put
dried fruit into food processor & pulse-chop a few times. Do not over-process. Add to chopped nuts in
bowl. Add ginger, cinnamon & sea salt. Start mixing & kneading by hand, adding honey or agave in small
amounts, until mixture sticks together. Roll into small balls & coat in sesame seeds. Refrigerate until
ready to eat.
